I found a special aged soy sauce from Yamaya in Kumamoto Prefecture.
It’s made from soy beans and wheat grown without pesticides or chemical fertilisers, and uses only natural salt. Then it’s gently matured for over 10 years.
The flavour is beautifully deep, mild, and full of umami with a touch of sweetness.
Perfect for sashimi like toro- just a little brings out the best!
