Three months have passed since I first made this umeshu, plum wine. It’s made with plums, rock sugar, and brandy. Usually, umeshu is made with white liquor, but I chose brandy instead. I tried a little, and it’s very tasty and fresh! I’m looking forward to it maturing into a milder, richer flavour.
