Shabu-shabu is a Japanese hot pot dish, named after the sound made when thinly sliced meat is swished through hot broth.
It is a winter favourite in our home, loved its simplicity and fresh flavours.
Seasonal vegetables are cooked in a light kombu dashi(kelp broth), and thinly sliced pork is briefly swished through the soup until just tender, allowing the natural flavors to come together.
Shabu-shabu is enjoyed with refreshing ponzu sauce and our home-made yuzu-kosho. To finish, enjoy zosui, a comforting Japanese-style risotto made with the remaining soup.
The pork comes from a long-established speciality butcher in Asakusa.

Afterwards, experience an authentic tea ceremony.
As a practitioner trained in the Urasenke Chado tradition over 30 years, I will prepare matcha for you, and guide you in making your own bowl. Unlike a tourist-style performance, this is a genuine moment of hospitality and tradition.

Schedule (approx. 4.5hours)
- Visit a supermarket and local food shops in Asakusa to explore seasonal ingredients.
- Learn how to prepare ingredients for shabu-shabu.
- Enjoy a hands-on experience making shabu-shabu with us.
- Learn the basics of the tea ceremony and enjoy two kinds of matcha.
- Try making your own matcha tea.

Price
This experience includes an Asakusa guided walk, meals, drinks and all fees and taxes.
Dress Code
There are no particular rules, but please wear clothes that are easy to move around in, as you will be walking around and cooking.
