A bamboo mat, called makisu, is a traditional Japanese cooking tool. It is made by finely splitting bamboo, with each piece carefully tied together using cotton thread. A makisu is most commonly used for rolling sushi, and it is also handy for shaping Japanese omelettes. I like to place the omelette on the natural side- the bamboo bark side, to give it a smooth surface.

It is filled with sweet red bean paste, known as anko, and wrapped in an oak leaf. The type of filling varies by region- popular varieties include smooth paste, chunky paste, and miso paste, which has a sweet taste with a hint of savouriness. The oak leaf is not edible, but it adds a lovely fragrance to the rice cake.
