Ingredients
This is my favourite herb mix made with shiso leaves, spring onion, ginger, myoga and sprouts. I prepare it in advance and keep it in the fridge, ready to use. It tastes amazing with tofu, salad, miso soup or whatever else you prefer!

Can you guess the secret ingredient in these little finger pieces? It’s a playful creation made with canned pork luncheon meat, simply layered with sliced cheese.I love the cross-section – it looks beautiful even though the idea is very simple. This is my style of cooking: easy, but full of fun and creativity!

Yakitori Somen CapelliniDoes the name sound a bit unusual? Don’t worry- it’s seriously tasty! This is my original recipe using ginger-flavoured tined yakitori and somen, Japan’s most popular summer noodle.Boil and chill the somen noodles, then mix with yakitori, black pepper, and olive oil. Top with tomato, sprouts, and lemon.Light, refreshing, and full of flavour- perfect for cooling down on a hot day!

There’s a beef specialty shop in Asakusa called Matsuki. Locals love it, using it for everyday shopping as well as for gifts. You’ll find many different cuts of beef here, but my recommendation is the small chopped beef, made up of assorted cuts. It’s really tasty and very reasonably priced.I usually stir-fry the beef with seasonal vegetables, garlic, and basil. The basil gives the dish a beautiful look and a lovely flavour.

Japanese people deeply appreciate seasonal foods. When sanma (Pacific saury) is served on the table, we say that autumn has arrived.Sanma is usually salted and grilled, then garnished with grated daikon radish and a wedge of lemon.Even though Japan’s seasons have been changing due to global warming, we still try to cherish and seek out the tastes of each season.

This flaked crab meat comes from a tin. I garnished it with shiso leaves, shiso flowers, and slices of lemon. The way food is served can make such a difference, and give it a more attractive and appetising look. Foe me, food presentation is one of the best perts of cooking. What do you think?
